Why you ask? Shouldn’t I be worried that my flight might not get out Thursday morning? (Answer: Probably).

I guess it is just this GIANT batch of ice cream I just made! This time I used Egg Beaters to try to thicken the mixture without the fat of egg yolks that are usually in ice cream. I can’t wait to try it!

(Edit: In case you were wondering, it’s vanilla ice cream with about a million Oreos, that’s why its gray ;-) )

But first I should mention my healthy dinner. I knew this afternoon I was craving something green, so I broke out this new purchase.

They didn’t have fresh brussels at the store so I got these. I’ve never had steamed brussels sprouts, and they weren’t very good :-/ I didn’t let that stop me though.

I had my brussel sprouts with a 1/2 tomato and 1/2 avocado salad. I also roasted a GIANT sweet potato.

It barely fit it the bowl. The skin was extra crispy and delicious….yum!

Lost + Ice cream = happiness. See you in the snow tomorrow!

I have had a super sweet day of eats today…..cue sugar high!!!!!

But it all seriousness it was a delicious day. Even though I was feeling super sore i dragged my butt to get my Vinyasa on. It was painful during, but yoga always leaves me feeling better by the end.

When I got back it was way past my lunch time. I started my lunch off with the standard gala apple. After that I had my leftover quinoa from last night.

I decided to make it breakfast quinoa! I added vanilla soymilk, a little maple syrup, some stevia and LOTS of cinnamon. I microwaved and stirred until it was like quinoa oatmeal…..if that makes any sense ;-) .

It wasn’t that big a serving, so I stopped at the convenience store downstairs and bought a new kind of bar.

I didn’t take a picture of it, but it was a Chocolate Peanut Crunch Promax bar. It was just ok, kinda bland and had nothing on the Cookies and Creme flavor. But I had no problem eating the whole thing, and it sure did fill me up!

There has definitely been one color missing from my eats today…..GREEN! I have a feeling there are some brussels in my future tonight, especially since I promised the BF another batch of oreo ice cream :-)

Hope everyone’s Tuesdays have been good. I know mine is going to improve significantly around 9pm tonight!

two days!

Happy Tuesday everyone! Even though my throat hurts and I’m sore, I’m in a good mood because I’m heading to Florida on Thursday morning :-D

This trip seemed so far away and all of a sudden it snuck up on me, and the best part is tomorrow is basically Friday! The only problem is this damn snowstorm that is headed our way, I’m hoping it clears out before Thursday and I can make it to Florida on time.

The reason I’m heading down there is to visit my mom. She lives outside of Sarasota which is such a fun little city. I haven’t seen her since October, which is way too long! I love visiting her because all we do is shop, eat and go to the beach….what could be better than that?!

Last night I had too much ice cream of course, which is bound to happen when I don’t eat enough all day.

So I had a bowl (times two). Delicious.

This morning I woke up hungry and sore. That weights class ALWAYS makes me hurt the next day, it was probably the million of lunges and squats he made us do! Of course I decided on a cup of cereal mix when I got to work.

This may sound weird, but I never thought of combining different kinds of cereal until I read about it on a blog. It’s such a great idea because it makes it like having a whole new cereal to try! Obviously this topic makes me way too excited, I’m just a nerd like that.

What is your favorite cereal of all time?

As a kid my favorite was Golden Grahams, right now I’d say its Kashi Honey Sunshine. But since I love cereal so much, it’s kind of like picking a favorite child, it just isn’t fair ;-)

I think I’m also in a good mood because my plans for tonight involve Lost and ice cream making….I can’t wait!

P.S. I can’t seem to comment on any Blogger blogs today which is so annoying! I’m not sure why that keeps happening….

no fat, no fun

I did push myself to go to my weights class at the gym during lunch. I was so glad I went, it wasn’t crowded and I got a great workout in. I’ll probably be feeling it tomorrow ;-)

I was feeling fine today until I had half of an Amazing Grass bar. For some reason that brought on serious heartburn. I know that high-fat foods are supposed to make heartburn worse, and lately I’ve noticed that after eating nut butters or full-fat cheese I get bad heartburn. So for now I’m going to keep the high fat foods to a minimum (which is sad).

Since I was feeling crappy after that, all I ate the rest of the day were a few handfuls of these.

Not enough food! By the time I got home I was starving, but decided to have something stomach friendly.

The bf was grilling chicken breasts for quesadillas (jealous), so I stole some grilled chicken to make my self a little bowl.

A few slices of chicken, some steamed mushrooms and 1/2 cup of quinoa.

With a little soy sauce it really hit the spot. Now I feel uncomfortably full, which is probably just a result of not eating enough all day.

All I have to say is, thank god I have low-fat ice cream in the fridge or this Monday would really be a bummer!

Good morning everyone! Hope Monday is treating you well :-)

I was excited to see that my chip time for the 5k yesterday was 30:29. In some warmer weather (and with more interval training), I think I can conquer my goal of a 5k in under 30 minutes. This got me thinking of the other goals I wanted to accomplish in 2010 and where I am on those now….

1. Run a 5k in under 30 – I think (hope) I’m on my way!
2. Figure out career stuff – I am pursuing a new position at my company that makes more use of my degree, so hopefully that will work out :-)
3. Do more outside activities – I tried snowshoeing for the first time and have conquered my fear of running outside. I also want to start biking and hiking, but I guess I can focus on those when it gets a bit warmer!
4. Write more – Fail. I am behind on writing my examiner articles, and have only managed two guest posts. I’ve got to work harder at this one!
5. Work on being healthier – Yes this is generic, and I’d say I’m doing okay with this one. I have maintained my weight since I’ve stopped counting calories, but I am still eating WAY too much sugar. I need to go to ice cream eaters anonymous!
6. Find a heartburn solution – I’m working on this one. I’ve had a few procedures but they have yielded no results. My heartburn is still bad but I am on a mission to find a solution. Next up is acupuncture and tests for food allergies!
7. Not be so hard on myself – Doing pretty well here. I make sure to get adequate rest days, but I feel bad if I don’t at least get some yoga in. In terms of eating I am much better about this, if I overindulge I try to just move on!

So it looks like the goals are going okay so far, it’s nice to have the blog and be able to look back (and be accountable) for them!

Back to this morning. For breakfast I made a big bag of cereal mix before I headed to work.

In the mix was Golean Crunch, Mesa Sunrise flakes, and some of this deliciousness.

Yay for children’s cereal! I had a cup of the mix with some skim milk for breakfast, it hit the spot. Now I’m getting hungry for lunch. Yesterday at the race they were giving out Olivia’s Organics salad mix in individual portion sizes.

I took a few of course ;-) So I am off to make a little salad and have my apple for the day.

Mmm gala. After that I think I will go to the gym for my favorite weights class! I’m not really in the mood but it will probably be good to get the blood pumping.

So of course I had to bake something for the Super Bowl party we were going to! I decided on my famous wheat-free peanut butter chocolate chip cookies.

Wheat-free PB choco chip cookies (Adapted from this recipe)

-1 cup Teddie Super Chunky PB

-2/3 cup white sugar

-1/3 cup dark brown sugar (packed)

- 1 egg

- 1tsp vanilla

- 1 tsp baking soda

- 1/2 cup milk chocolate chips (or whatever chocolate strikes your fancy!)

- turbinado sugar for rolling (like sugar in the raw etc)

Preheat over to 375 and generously grease a baking sheet. Mix first 6 ingredients together until well combined. Then mix in chocolate chips.

Roll into tbsp size balls and then coat in turbinado sugar.

All ready for the oven!

Bake for 10 minutes.

Let cool completely on sheet before removing.

These are always a hit, and you would never know they have no flour.

The party was fun but we decided to come home at halftime. The problem was that our friends have a CAT and we are both seriously allergic. A summary of my (unhealthy) eats look something like this for today:

-apple

-chocolate

-shrimp

-cookies (4)

-carrots

-ice cream

That pretty much sums it up. I didn’t take too many pictures, hopefully I’ll be back on track with real meals tomorrow ;-)

Super Sunday 5k!

Hi everyone! Thanks for all the good luck wishes on my 5k this morning. Even though it was only about 20 degrees the race was sold out and it was quite a party!

It was a cold morning, and I managed to get a cramp in the last mile. Overall though, this 5k went much better than my previous 5k! I completed my first 5k in 32:21 and according to my Garmin I completed this one in 30:33. I don’t know my chip time yet but I am still excited about the improvement. Now I think my goal of running a 5k in under 30 minutes in 2010 is definitely doable!

After the 5k we went straight to the supermarket. I know, it wasn’t the smartest idea but we wanted to get our shopping out of the way. There were a million people there because of the superbowl, so it took extra long. By the time we got home I was starved.

So I made a big bowl of stovetop oats.

1/2 cup oat bran

1/2 cup oats

1 cup water

1/2 cup vanilla soymilk

1/3 banana

1tbsp brown sugar

1 crumbled graham cracker on top!

So good. I also had a few handfuls of these.

Mmmm I love cereal. Ok now its time for more stretching and a shower. Then maybe some baking for the big game later. Happy Superbowl Sunday!

Last night I had the pleasure of meeting some lovely Boston bloggers at Grezzo. The restaurant is completely raw and vegan and was quite an experience!

It was so beautiful, and I think everyone was (pleasantly) surprised by the food. I ordered the Grezzo “sliders.”

They were homemade patties (very similar to falafel) sandwiched between tomatoes with avocado, pickles, pickled onions and watercress with blue cheese dressing. All the cheese is made out of nuts, and honestly you couldn’t tell it wasn’t regular cheese!

The gelato is made completely from nuts, and it was the most impressive part. So creamy and delicious, even though I couldn’t finish the brownie I didn’t let any of the gelato go to waste ;-) Thanks to Melissa for setting the dinner up, so fun!

I know this post is super quick, but I’m off to run a 5k in the cold (yikes), wish me luck!

Today we had such a great day out and about in Beantown. First we headed to the South End to check out this fun gift show.

It was in a huge loft and all kinds of designers and artists were selling fun stuff.

We browsed for a while and sampled some chocolate ;-)

I ended up buying some adorable greeting cards (I am such a sucker for cute cards). Besides that it was mostly just fun to walk around and see all the cool stuff.

After that we went for a walk around the SoWa district. It is filled with artists studios and interesting stores. Soon I was craving something hot, it was freezing out!

We stumbled across this really cute cafe. The best part was that it was in a furniture store!

You sat and had your coffee (or in my case tea) on the beautiful furniture they were selling.

We sat on a huge leather couch with a beautiful copper coffee table. It made my tea very photogenic!

After our tea we continued to look around, there was so much beautiful stuff.

At this point of course I had to pee. I was not expecting what I found in the bathroom….

That’s right, an electronic toilet seat! Not only was the seat heated, but it had all these crazy jets that came out of it. Honestly, I was a little nervous, but of course I had to take a picture to share with you. Here is the website for the seat if you want to check it out ;-)

Obviously this was turning out to be an exciting day! We headed from their to Back bay where we shopped the book sale at the Boston Public library and I checked out some running shoes at Marathon Sports. I’m thinking I might buy a pair of Asics, but I would have to buy Men’s shoes because of my width. Does anyone know if it’s bad to wear Men’s shoes?

When I got home there were two awesome packages waiting for me.

Fiber Gourmet pasta and crackers, as well as four kinds of Crofter’s Organic Superfruit Spread. I can’t wait to try the Fiber Gourmet pasta, I hear great things. I’ll definitely have some reviews for those samples soon.

The Crofter’s I won from Melissa in a giveaway! I was starved when I got home and I knew I had to break open the first jar.

A piece of toast with this spread really hit the spot. I like it because it really thick and not as sweet as your traditional jam.

I also cooked up some red swiss chard that has been sitting in the fridge.

Yum, with just a little soy sauce this was delicious. I think swiss chard is maybe my favorite green right now, I’m in love.

Good morning everyone! I know I’m a little late in posting this morning but its been a busy one. I headed out early for some Vinyasa yoga action. On my way over I ate about a third of this bar.

I really liked it! Reminded me of a chocolate Amazing Grass bar…yum.

Then I headed to yoga. I’m going to miss my favorite power yoga tomorrow because of the 5k, so I made sure to make it to vinyasa this morning. It felt great but was a little slower paced than my favorite power yoga. After I headed to get my car inspected! My sticker was two months expired so I really had to get that done…

By the time I got home I was starved! First I made a big smoothie bowl.

Frozen bananas, strawberries and cherries with vanilla soymilk. Perfect but very cold! I needed a little tea to warm me up.

Now I’m on the couch sipping tea and nibbling on a promax bar. I think I am partially addicted to these because they don’t give me heartburn!

In a little bit we are heading out to run errands and then check out a craft fair in the South end. I want to get my mom something for when I go visit her next week :-D
